How We Make It
The shortest ingredient list we could manage
We start with whole peppers — never dried powder, never extract. The peppers are charred or slow-roasted depending on the sauce, then blended with the smallest number of supporting ingredients we can get away with. If something doesn't belong, it doesn't go in.
We make Fierro Fire in runs of 200 to 500 bottles. That's not a marketing choice — it's a practical limit of working this way. Bigger batches mean less attention per bottle. We're not interested in less attention per bottle.
Source whole peppers
We buy from farms we've visited, in growing regions that produce the right flavor — not just the right heat number.
Roast or char by hand
Depending on the sauce, peppers are fire-roasted, slow-charred in cast iron, or left fresh to preserve brightness. This step takes time. We don't skip it.
Blend, taste, adjust
Every batch is tasted before it bottles. pH is checked. We're not guessing — this is a craft, not a kitchen experiment.
Bottle and label by hand
Every bottle is filled, capped, and labeled in-house. The batch number on the label is real. If you want to know what went into it, write us.
Heat is easy. Flavor that makes you reach for the bottle again is the hard part. The Fierro Fire Philosophy

From the People Who Use It
What they actually said
"I've been through every artisan hot sauce I can find online. Ghost Mango is the first one where I caught myself actually reading the label to understand what I was tasting. The mango isn't a gimmick — it's there, it's real."
Marcus T.

"I'm a cook. I don't use hot sauce from a bottle much. Fierro Original changed that. It tastes like someone actually made it, not formulated it. Goes into my marinades, my eggs, my bowls. My wife asked me to stop buying it because she thought it was too expensive, then she tasted it."
Jamie R.
Portland, OR • 3-bottle subscriber
"Bought the Smoked Morita for a dinner party. Not a single person asked about the food — they all just passed the bottle around and asked where they could get it. That's it. That's the review."

Questions
Straight answers
What makes Fierro Fire different from store-bought hot sauces?
We start with whole peppers — not powder, not extract. Every sauce is made in small batches of 200 to 500 bottles, which means we can taste and adjust every run. Most shelf hot sauces are made to a cost target. We make ours to a flavor target.
How does the subscription work?
You pick your box size (3 or 6 bottles) and how often you'd like it — monthly is our default, but you can adjust the cadence. Each cycle, you choose which sauces to include. You get 15% off every order, free shipping, and early access to limited batches. Cancel or pause anytime from your account — no phone calls, no hoops.
Do you offer one-time purchases?
Yes. Every sauce is available as a one-time order — single bottles starting at $14, or multi-bottle sets if you want to stock up. Shipping is $5 flat for orders under $35, free above that.
How hot are the sauces, really?
We rate each sauce on a 1-5 scale and we mean it. Fierro Original and Smoked Morita sit at 2 and 1 — daily-driver heat, serious flavor. Ghost Mango is a real 4 — it builds and it stays. We'll never hide heat in a mild-sounding name, and we'll never fake heat with extract in a 'extreme' name.
Where do your peppers come from?
It depends on the sauce. Our arbol and guajillo peppers come from a farm cooperative in California's Central Valley. Ghost peppers are sourced from a small grower in New Mexico. Moritas we source from Oaxaca via an importer we've worked with for two years. We list the origin on each bottle label.
How long does a bottle last once opened?
Refrigerated, our sauces hold well for 6 months after opening — the vinegar-based recipes are naturally shelf-stable within that window. Unopened, the shelf life is 12–18 months. We put a best-by date on every bottle.
